I have used..

A bottom layer of pirate walls. Then, a layer of crates. That about equals the height of one of the gingerbread walls.

I'll get an example soon.

I didn't really make the inside of my house... I just put a wall right behind another wall and stacked another wall on top of the wall that was behind the wall that we began with? Get it. No? Ah well.

I tried using crates but those are a little shorter than the Gingerbread roof pieces, so when you put on the roof, the pieces don't line up with the pieces standing on the crates. So I used all Gingerbread. When you need height for the 2nd layer (especially if you did a second story like me), use extra Gingerbread walls for tall pieces and then build the roof completely out of Gingerbread pieces. Thankfully, they are stackable.
